For all our recipes the ingredients used are 100% organic and the flours come from a blend of organic and ancient (einkorn) grains without modifications, organically grown without chemicals.
WEIZEN LANDBROT
The MIKE'S BROT' White Country Bread recipe is made with a blend of organic wheat bread flour, Einkorn AP ancient flour and ancient whole wheat Einkorn flour. We add a pinch of nutmeg and a touch of organic honey to the dough to neutralize the acidity of the sourdough. Finally, the German touch is given with a homemade (Brotgewürz) a mix of ground spices, highlighting the CARAWAY.

BAUERNBROT
The MIKE'S BROT Farmer's Bread recipe gives it a rustic look with the blend of organic wheat bread flour, ancient Einkorn AP wheat, organic whole rye and ancient Einkorn whole wheat flour. We add a touch of cane molasses to the dough to neutralize the acidity of the rye sourdough a little. Finally, the German touch is given with a homemade (Brotgewürz) a mix of ground spices, highlighting the CARAWAY.

The MIKE'S BROT Black Bread recipe is our darkest bread with more organic whole dark rye, and we blend it with organic wheat bread flour, ancient Einkorn AP flour and a touch of ancient Einkorn whole wheat flour.
For its flavor, a touch of cane molasses is added to soften the acidity of the rye sourdough and the (Brotgewürz) a mix of ground spices, highlighting the CARAWAY.

SCHNITTBROT
The MIKE'S BROT' Sandwich Bread, the recipe is made with a blend of organic wheat bread flour, Einkorn AP ancient flour and ancient whole wheat Einkorn flour. This is an enrich bread which contains organic butter, grassfed milk and organic cane sugar.We add a touch of organic raw honey to the dough to neutralize the acidity of the sourdough.

STOLLEN
The organic STOLLEN from Mike's Brot exclusive recipe is a sweet Christmas bread made with 100% ancient white wheat Einkorn AP flour. Enriched with milk, butter (pasture-raised cows), cane sugar, eggs (pasture-raised), yeast and salt. A mix of raisins, cranberries and sultanas and nuts (pistachios, hazelnuts and almonds) is added to the dough. Once baked, it is painted with a layer of coconut oil and sprinkled with powdered sugar.
