The MIKE'S BROT' White Peasent Bread recipe is with 90% organic white wheat flour, 10% whole wheat. We add a pinch of nutmeg and a touch of organic honey to the dough to neutralize the acidity of the sourdough. Finally, the German touch is given with a homemade (Brotgewürz) a mix of ground spices, highlighting the CARAWAY.

The MIKE'S BROT Farmer's Bread recipe gives it a rustic look with the percentages of wheat flour 70%, whole rye 20% and whole wheat 10%. We add a touch of cane molasses to the dough to neutralize the acidity of the rye sourdough a little. Finally, the German touch is given with a homemade (Brotgewürz) a mix of ground spices, highlighting the CARAWAY.

The MIKE'S BROT Black Bread recipe is our darkest bread with more towards 40% rye, and we complement it with 50% white wheat flour and a touch of 10% whole wheat.

The organic STOLLEN from Mike's Brot exclusive recipe is a sweet Christmas bread made with sourdough and 100% organic white wheat flour (ancestral grains). Enriched with coconut oil, cane molasses, eggs, milk (free-range cows) and spices. A marinade of raisins, blueberries and sultanas mixed with nuts (walnuts, hazelnuts and almonds) is added to the dough. Once baked, it is painted with a layer of coconut oil and sprinkled with powdered sugar.
